WHAT YOU NEED:

  • Roast yellowtail snapper with butter and lemon.
  • Butter without salt
  • A small amount of salt and pepper.
  • Seasoning for seafood. I made this fish with Old Bay seasoning.
  • Every grocery store in the United States carries it. I also enjoy Key West Spice Co.’s Southernmost Blend. They are available for purchase at Publix and Winn Dixie stores all around Florida.
  • Lemons
  • Fresh parsley, curled or with flat leaves.

YELLOWTAIL: WHAT CAN I SUBSTITUTE?

You can use any thin white fish fillet for the yellowtail in this dish. Having wild-caught catfish, hogfish, mutton snapper, mango snapper, red snapper, or mangrove snapper would be amazing.

Roasting thicker fillets, such as Atlantic Tripletail, Sworfish, Grouper, or even Mahi Mahi, for 15 to 20 minutes, or until the fish flakes easily with a fork, will make for a delightful meal.

If you’re not in Florida, look for wild-caught cod, sole, or flounder.

THAWING FROZEN FISH:

Yellowtail Recipe:

Put your fish in the fridge to thaw if it’s frozen. Usually, this procedure takes around an hour. Because yellowtail is so thin, it may thaw even faster.
As an alternative, you can run cold water over the fish in a colander in the sink to soften it. But when defrosting the fillets this way, especially if you’re doing it more vigorously, take care not to tear or shatter them.

  • It’s easy to roast yellowtail in the oven.

  • Yellowtail baked in an Old Bay spice mixture.
  • Use Old Bay seasoning or another seafood seasoning to season the top of the fish.
  • Butter-topped baked yellowtail dotter in a glass pan.
  • Drizzle butter all over the fish. Bake the fish for 10 to 15 minutes, or until it flakes easily with a fork.

Rice with asparagus and yellowtail:

Yellowtail Recipe:

The Baltimore Sun claims that Gustav Brunn, a German immigrant who began his career as a spice merchant in Germany and carried on with his business in the United States following World War II, was the inspiration behind Old Bay.

Old Bay originated from a spice blend he created especially for Baltimore’s wholesale seafood companies. Since 1939, this flavorful mixture of spices has delighted guests and remains a top choice for seasoning fish, shrimp, crab cakes, and chicken wings.
