- delicious kielbasa A tasty and affordable smoked Polish sausage is called kielbasa. I always have some in the refrigerator because it keeps nicely as well. You may use cooked ground beef or Italian sausage for a delicious and unusual taste if you have either of those on hand.
- If your family finds the yellow onion to be too thick, feel free to substitute onion powder. Another vegetable you like, like broccoli, bell peppers, or snow peas, can be substituted. You can use pre-chopped onions from the freezer section to save prep even more.
- Fresh garlic cloves are preferable to pre-minced garlic, but I normally choose for the former.
- Penne pasta is a staple in this recipe, but any pasta you have in your pantry will work well. Choose one that has some ridges or grooves so that the creamy sauce can cling to it like pasta does, such as rigatoni or rotini.
- I would want to say that I use milk for health reasons, but the truth is that my kids only consume 1% of it. Heavy cream can be used in place of whole milk if you truly want a creamy sauce. Whole milk will be somewhat richer.
- Cheese: Without cheese, it’s difficult to make cheesy pasta dishes. This has a slight mac and cheese vibe thanks to the medium cheddar, but you may use any meltable cheese you like.

I’m using a saute pan, but a Dutch oven would also be a good option; the main requirements are that it be somewhat wide and have somewhat high sides. In addition, a cutting board, knife, and grating tool (if you choose to grate your cheese) are required. It melts more smoothly than pre-shredded cheese, and occasionally it’s entertaining to vent your resentment on a block of cheese. Take care—don’t cut your fingers!

Step one: dice and sauté:
Add the kielbasa and onion, chopped into small pieces, to your pan along with a little butter. While the stove is on medium-high heat, cut the fresh garlic if using. After the sausage and onions start to brown, which should take around three minutes, add the garlic and stir for a further thirty seconds or so.
Step 2: Stir in the water:
Add the pasta, milk, and broth to the pan. Once the pasta is covered and brought to a boil, reduce the heat to medium-low and simmer it until it is cooked, stirring occasionally. Once covered, one-pot recipes typically take 1.5 times longer than the cooking time recommended on the box; however, this might vary based on how quickly the dish to a boil. While you wait for the pasta to cook, shred that cheese.
Step 3: Combine and continue serving:

- To cook pasta, place it into a large pot of boiling salted water and cook until al dente. Once the pasta has cooked, drain and reserve about 2 cups of water. Cook the sauce and kielbasa at the same time as the spaghetti.
- Melt the butter in a skillet over medium heat, then add the kielbasa slices and cook for approximately a minute on each side, or until the edges are crispy. Transfer the kielbasa to a platter.
- In a skillet, simmer chopped onions in about 1 tablespoon of reduced oil until they become soft, fragrant, and transparent. Add the sun-dried tomatoes and chopped garlic, and cook until soft and fragrant, about 1 minute.
- Toss to combine, add ½ cup of pasta water, return the cooked kielbasa slices to the pan, and cook for a further minute or two to let the flavour thoroughly meld.
- Add the chilli flakes, black pepper, and salt to taste along with the cream cheese to a skillet with an additional ½ cup of pasta water. Cook for a further 30 seconds or until the sauce thickens after stirring to combine. Taste and adjust with salt and black pepper as needed.
- When the pasta is cooked, add it to the skillet and toss or stir it to ensure that all of the creamy sauce coats it. Serve immediately with garlic bread and parmesan cheese, and add extra pasta water if necessary to thin the sauce.
