A result of the chili served was something rich and satisfying with a wonderful contrast of creamy soft beans against the spicy, flavorful broth.

  • 1 tablespoon olive oil: Where you sauté your vegetables.
  • 1 large onion: Chopped.
  • 2 cloves garlic: Minced
  • 1 bell pepper: Chopped, red, green, or yellow
  • 2 carrots: Chopped
  • 2 celery stalks: Chopped
  • 1 can [14.5 ounces] diced tomatoes: With their juices
  • 1 can [15 ounces] kidney beans: Rinsed and drained
  • 1 can [15 ounces] black beans: Rinsed and drained.
  • 1 can (15 ounces) garbanzo beans (chickpeas): Rinsed and drained.
  • 1 cup vegetable broth: Or chicken broth if preferred.

  • 2 tablespoons chili powder: For that classic chili flavor.
  • 1 teaspoon ground cumin: Adds a smoky depth.
  • 1/2 teaspoon paprika: For a subtle smokiness.

  • 1 bay leaf: Optional-for added depth of flavor.
  • 1 tablespoon tomato paste: Adds richness and depth.

1. Soften the Vegetables:

Place the olive oil in a large pot over medium heat. Add the diced onion and cook, stirring occasionally, until the onion is translucent, 5 to 7 minutes. Add the minced garlic and cook a minute further until fragrant.

After the chili has had time to simmer, taste and test the seasonings, and add any needed amount of salt, pepper, or chili powder you would like. If the chili is too thick, add more broth to your desired consistency.
